Hawker, Sembawang Hills Food Centre
This is Mr Zhuo. He is 68 years old. He is the boss/chef/owner of Ah Ee Traditional Hokkien Salted Duck (亚一传统福建咸鸭). This type of duck preparation is hard to find in Singapore.
Mr Zhuo learned to cook this from his mother when he was twelve. However, he only started this stall around eight years ago as his contribution to counter the demise of traditional food. I like Mr Zhuo’s duck.
He is also very friendly. After eating a plate, we decided to da bao (takeaway) half a duck. He gave us extra chilli and a portion of duck liver. Small gestures go a long way.
